What is the chain shown inthe photo for ? I guess its some sort of stop. I am changeing over to hydrauic steering,do I need a chain/wire ?

Security against thief I think. I suppose you will need it even if you change too hydraulic steering.

This is an end stopper for the rudder, to prevent too much stress on the steering wire when going backwards for full rudder to one side. I am not sure if this is required for hydraulic steeing, but it doesent hurt to keep it as an extra security item...

The chain should be there anyway. It is there to prevent the rudder to turn into the propeller. If you have high speed on a boat in the reverse direction, the piston from the steering cylinder may break of if you turn the rudder to one of its endpoint. If it is a big rudder blade, there will be big forces on the steering cylinder

Thanks for the answers. I thought it was somthing like that . To stop overloading the steering parts.I have,nt seen this before but a good idea.
